A simple and scrumptious way to utilize the abundance of tomatoes and basil in the garden, this sandwich comes together in a snap, particularly if you use pre-cooked bacon, perhaps leftover from breakfast. Of course, there is no such thing as leftover bacon in this house unless I hide it from my teenage son! Technically this should be called a BST sandwich since I replace the lettuce with spinach, or BSBT if you want to include the basil, but "BLT" sounds much better. Feel free to substitute whatever salad green you prefer, whether it's lettuce, spinach, kale, arugula, etc. I love the addition of fresh basil! But if that's not your cup of tea, by all means leave it out. My son always adds a slice of provelone cheese to his BLT but I prefer a simpler sandwich.
