This is a recipe that I remember from my childhood...incredibly simple and soooooo yummy!!! You can chose to make this any flavor that you'd like; my favorite is cherry but you can use any flavor of Jell-O mix. As you can see from the picture, I made this in an 8-inch round cake pan, single layer. This allowed me to freeze one cake round and have a ready-made dessert for a future busy day. However, the recipe can also be used to make one 9x13-inch cake which will serve 12-18, depending on how big you cut those slices. Enjoy! Cherry Jell-O Poke Cake Servings: 12-18 Ingredients: 1 box white cake mix Plus ingredients called for on package 1 (3 oz.) box of cherry Jell-O 1 cup boiling water 1 (12 oz.) container Cool Whip, thawed Directions: 1. Prepare the cake mix as directed on the package, using instructions for either a 9x13-inch baking pan or two 8-inch round cake pans. Bake as instructed. 2. Remove cake(s) from oven and allow to cool for 30 minutes. 3. Using the handle of a wooden spoon, poke holes all over the cake. 4. In a medium bowl, mix together the Jell-O mix and boiling water. Stir until the Jell-O dissolves fully. 5. Pour the Jell-O mixture evenly over the cake(s). Cover and refrigerate for 2 hours. 6. Remove from fridge and spread Cool Whip over the top of the cake(s). Cut into pieces and serve.
