Last Saturday morning, I was working in my office, drinking my coffee, when I get a text message from my teenage son saying, "How much do you love me, Mom?" All parents know that is a loaded question that WILL be followed by a favor! :) Apparently, one of his friends had posted on SnapChat a video of himself eating Dutch pancakes for breakfast and my son wanted me to make some for him. Now, I've never even heard of Dutch pancakes but after getting a description of them from my son (thin, rolled up pancakes), I browsed the internet until I found a recipe that seemed to make sense to me. Now I'm not one to fully follow directions (usually) so of course I tweaked it a bit and that recipe is what follows. The scientist in me loves to experiment so I started with the basic batter recipe and presented my son with a plain pancake, then one with a cream cheese filling that I whipped up (trying to remember what my mom used to put in her pastries) and one sprinkled with blueberries. His favorite (not surprisingly) was the filled version that was sprinkled with powdered sugar. My favorite was filled and topped with homemade whipped cream and blueberries. One of the recipes that I found online said that you could add toppings to the batter, a few seconds after pouring it in the hot skillet. I tried to do that with thawed blueberries from my freezer but it only made the pan messy and all of my pancakes after that had a bit of burned blueberry juice on them...not pretty! So I decided that I would add the toppings to the finished product and not try to add them to the pancake as it was sizzling on the stove. Feel free to get creative with the fillings/toppings that you use. I'm including the cream cheese filling recipe that I came up with on the fly but you could also use lemon curd or a 100% fruit spread or jelly as well. The sprinkled powdered sugar on top made it feel oh so fancy!
