If you are looking for a simple dish to bring to a potluck, this is the perfect one to try! It looks beautiful with the bright and fresh colors of the veggie toppings and it is a breeze to throw together! This recipe starts with a taco meat mixture base and then is topped with a simple biscuit dough that when baked, combines perfectly with the taco mixture to provide a hearty main dish. The recipe calls to bake this until it is golden brown but one thing I noticed is that the edges will actually appear a bit darker simply because as it is baking, the meat mixture seeps up through the biscuit mixture and tints the breading a rich reddish brown hue. While the meat and biscuit base is baking, I chopped up the veggies and patted them dry (just removed a bit of the excess moisture, not bone-dry) with a paper towel. Really, the best part of this dish, for me, is how colorful it is. Feel free to adjust the toppings according to your family's tastes. Chopped onions, bell peppers, etc. would all be excellent additions. You could also serve the toppings on the side along with a bowl of salsa. Potluck-ready!
